Curly kale works best for kale chips. Take kale off the stems and rough chop approximately 6-8 cups. Pre-heat oven to 300. Place cut and cleaned kale on a baking sheet with parchment paper. Use 1-2 tablespoon of evoo and mix into kale. You can also use a basting brush if you have one. Sprinkle with sea salt and bake for approximately 10-20 minutes. For sweet version reduce to 1 tablespoon of oil and add a teaspoon of maple syrup and a couple of sprinkles of cinnamon. Mix well and bake. Yum!
